This is our smaller recipe, but it still makes 2 1/2 quarts of batter so you may want to halve it.
6 Eggs Beaten
1 1/2 C Milk
Add milk to eggs and beat together
5 C Flour
1 Tbsp Salt
4 Tbsp Baking Powder
2 Tbsp Sugar
Sift above 4 ingredients to combine
2 Tbsp Oil
Add oil to milk and beat in flour mixture. Do not over beat or your fritters will be tough.
2 1/4 pounds of corn kernels drained weight.
Drop spoonfuls into 350*F oil. (we use a small scoop) and they take about 6 minute to cook. Smaller spoonfuls will cook quicker.
One really good thing to serve with these is bacon and maple syrup.
